A Recipe For Cheesy Shells
Finding meals that are enjoyable for both your children and yourself can be difficult. Here is a recipe that the whole family will enjoy.
Serves: 4
Preparation time: 10 minutes
Cooking time: 20 minutes
Ingredients:
8oz/225g Wholewheat Pasta Shells
4 tsp Oil
2 Leeks
2oz/50g Butter
2 tsp Pesto Sauce
1/4 pint/150ml Single Cream
3oz/75g Sage Derby Cheese, Crumble into small pieces
3oz/75g Double Gloucester Cheese, Crumble into small pieces
3oz/75g White Cheshire Cheese, Crumble into small pieces
Salt and Freshly Ground Black Pepper
Method:
1. Bring a large saucepan of salted water to the boil. Add pasta and 1 tsp oil. Bring water back to the boil and cook pasta for 8-10 minutes until tender.
2. Meanwhile, halve the leeks lengthways and wash thoroughly, then drain and thinly slice.
3. Drain pasta. Melt butter and remaining oil in drained pasta pan and fry leeks for 5 minutes until softened.
4. Mix pesto with the cream and add to the leeks, together with the pasta, cheeses and seasoning. Toss together and reheat gently. Spoon on to warmed serving plates.
Serve Immediately & Enjoy!
