Cucumber and bean sprout salad
Carbohydrate content per serving: 4 grams
Serves: 2
Ingredients
50 grams bean sprouts
1 Lebanese cucumber, sliced lengthways julienne-style
1 yellow pepper, deseeded and very thinly sliced
Handful of rocket leaves
2 tbsp chopped fresh chives
The Dressing
4 tbsp extra virgin olive oil
1 tbsp balsamic vinegar
1 tsp Dijon mustard
pinch of granulated sugar
freshly ground black pepper
Method
Place the ingredients of the dressing in a screw-top jar and shake well. Toss the salad and drizzle the dressing over.
Garnish with chopped chives.
