Fantastic Fishcakes

Ingredients
500g Haddock
600g Peeled and roughly chopped potatoes
200g Cooked prawns
3tbsp Chopped parsley
2 Pinches dried chilli flakes
2tbsp Olive oil
Method
Preheat the oven to Gas6/200C/400F.
Place the haddock (about 4 small pieces) in a pan and cover with milk. Bring to the boil, then reduce the heat and simmer for 4-5 minutes until cooked. Drain the fish and allow to cool.
Bring a pan of lightly salted water to the boil and add the potatoes. Reduce the heat and simmer for 6-7 minutes until cooked. Drain the potatoes and mash in a mixing bowl.
Skin and bone the fish, then flake it into the potato. Add the prawns, chopped parsley and chilli flakes.
Divide the fishcake mixture into 8 equal rounds, then shape the rounds into patties. Heat the olive oil in a large frying pan and fry each fishcake for 2 minutes on each side until golden. Transfer the fishcakes to a baking tray and bake for 10-12 minutes.
Serve with tartare sauce and lemon wedges.
