John Travolta’s Crab Quiche


Serves 6

Ingredients:

115g/4oz Chilled butter
3 tbsp Margarine
225g/8oz plain flour
Salt & Freshly ground black pepper
2-3 tbsp cold water
350ml/12floz double cream
3 eggs,plus 1 egg yolk
200g/7oz grated Cheddar cheese
300g/11oz grated Gruyere cheese
450g/1lb crabmeat
2 tbsp chopped fresh tarragon
2 tbsp chopped fresh basi
1 tbsp chopped fresh chervil

Method

Place the butter, margarine, flour and 1/2 tsp salt in a food processor and blend for 30 seconds. Add the cold water and blend until the dough comes together. Remove and chill in the fridge for 1 hour.

Preheat the oven to 180′C/350′F/gas 4. Mix the cream and eggs together and season with salt and pepper to taste. Roll out the dough to 0.5cm / 1/4inch thick and use to line a 23cm/9inch pie dish.

Sprinkle half of each of the cheeses into the dish, add the crab meat and herbs and top with the remaining cheese. Pour the custard over, then bake in the centre of the oven for 1 hour 15 minutes. If the top starts to brown too much, cover with tin foil.

Allow to stand for 30 minutes before serving.
