Pan-Fried Squid with Chilli
Serves 4
Ingredients
1kg/2lb baby squid
3 tbsp Olive oil
1 crushed clove garlic
1 Deseeded and finely chopped red chilli
1 Juice of lemon
Salt and freshly ground black pepper
Handful of chopped flat-leaf parsley
Method
Slit the squid down one side and lay them out flat. Make small criss-cross cuts in the squid, using a sharp knife.
Mix half the olive oil, garlic, chilli and lemon juice in a bowl and add the squid. Turn to coat and leave to marinate for 15 minutes.
Heat a large frying pan until smoking, then add the remaining oil.
Drain the squid, reserving the marinade, and put in the pan. Season with salt and pepper. Toss the squid in the pan for abot 3 minutes, then add the reserved marinade and the chopped parsley.
Mix well and serve immediately.
