Salmon Teriyaki

Ingredients

2tsp vegetable oil
4 x 175g Scottish salmon fillets
4tbsp teriyaki sauce
1tsp honey
1 cucumber, ribboned with peeler
2 slices fresh gunger, cut into sticks
1 red pepper, cut into sticks
4 cherry tomatoes, sliced
1 small red onion, thinly sliced
1tsp toasted sesame seeds

Method

Fry salmon in the oil, remove and keep warm.Wipe the pan and then add the teriyaki sauce, honey and 2tbsp of water and bring to the boil then simmer.Put the cucumber in a bowl with ginger and pepper. Pour in the boiling water, leave for 2 mins, then drain.

Arrange cucumber, tomatoes and onion on plates, top with the salmon, ginger and pepper. Spoon over the sauce and scatter with sesame seeds.
