Swordfish Steaks With Lemon And Garlic

If you are not a fan of fish then Swordfish is well worth a try. It does not taste of fish whatsoever more of a meat melt in your mouth! Give it a go you will not be disappointed.

Ingredients

2 Swordfish steaks, approximately 150 grams each
Juice of a freshly squeezed lemon
1 peeled and grated garlic clove
25 grams cubed unsalted butter
Lemon wedges

To garnish
Sprigs of fresh dill

Method

Place the swordfish steaks in the base of a shallow oven-safe casserole dish, squeeze the juice of half a fresh lemon over each steak, sprinkle over the grated garlic and dot with cubes of butter. Cover with pierced aluminium foil, place in the centre of a pre-heated oven at 180 degrees C (gas mark 4) and cook for 15-20 minutes. Serve with tomato and avocado salad (recipe below), garnish with lemon wedges and sprigs of fresh dill.

Tomato And Avocado Salad

Carbohydrate content: 8 grams

Ingredients

1 Medium ripe stoned, peeled and diced Hass avocado
2 tsp freshly squeezed lemon juice
4 large vine-ripened chopped tomatoes
1 Small yellow pepper, deseeded and sliced
1 medium red onion, peeled and sliced into thin rings
Freshly ground black pepper

Vinaigrette

4 tbsp extra-virgin olive oil
1 tbsp balsamic vinegar
pinch of rock salt
freshly ground black pepper

Method

Add the virgin olive oil, balsamic vinegar, salt and freshly ground black pepper to a screw-top jar and mix thoroughly.

Mix the avocado with the lemon juice, then add the tomatoes and onion. Season to taste and drizzle the balsamic vinaigrette over the salad.
