Tiger Prawn Salad With Avocado Lime Dressing

Serves 2

Ingredients

300 grams shelled and deveined cooked tiger prawns
1 tbsp freshly squeezed lime juice
3 tbsp dry white wine
100 grams mixed curly green lettuce (endive,mizuna,cos,green coral)
2 spring onions, chopped into 4-5cm lengths

To garnish
lemon zest

Dressing

1 small ripe, halved, stoned and diced Hass avocado
2 peeled and chopped shallots
1 tbsp freshly squeezed lime juice
2 tbsp extra-virgin olive oil
freshly ground black pepper

Method

Marinate the cooked tiger prawns, lime juice and white wine for 2-3 hours in the fridge.

Blend the avocado, shallots, lime juice, olive oil and freshly ground black pepper until smooth.

Mix the lettuce leaves and spring onions in a large salad bowl, arrange the tiger prawns on the lettuce and spoon the avocado dressing on the salad.

Garnish with lime zest.
